Ingredients

Soup
  • Bun rieu paste (crab and herbs)
  • tomatoes canned, some fresh if desired
  • Onions, finely chopped
  • garlic
  • Chicken stock / water
  • Fried tofu, halved
  • Fish balls/cubes, cut into mini cubes
  • herby vegetables, bac ha
  • beaten egg
  • Green onion chopped
  • Fried onions
Others
  • Rice vermicelli, thin ones with some bite. eg Three Sisters https://thethreesisters.com.au/
  • Meat balls (mince, onion, bread finely chopped)
  • Sesame oil, fried shallots topping

Method

Meat balls

  1. Finely chop the bread, mix (squeeze by hand) with onion and mince, add salt, pepper, form into balls.
  2. Pan fry and add color to the meatballs before adding to the soup

Soup

  1. Fry onion, garlic, salt, pepper
  2. Cut fish cubes into mini cubes
  3. Combine everything and cook, add green onion, vegetables last
  4. Beat eggs and drizzle into soup
  5. Add to noodles, top with Sesame oil, fried shallots
