German pancake or sweet dutch baby
Ingredients
Batter
- 3 large eggs (room temp, put in warm water)
- 150 ml milk (room temp, creates a higher rise)
- 1 tbsp caster sugar
- 100g flour
- 1 tsp vanilla
- pinch salt
- nutmeg, cinnamon
Cooking
- 25g butter
Method
- Oven at 246 degrees C preheat cast iron pan in oven
- Mix the batter, half milk first to ensure even mixture
- heat butter in cast iron pan
- pour in batter
- Oven ~12-13 minutes or until brown and puffed.
- It will poof up then decompress. So to impress, bring to table immediately.
