Ingredients

Batter
  • 3 large eggs (room temp, put in warm water)
  • 150 ml milk (room temp, creates a higher rise)
  • 1 tbsp caster sugar
  • 100g flour
  • 1 tsp vanilla
  • pinch salt
  • nutmeg, cinnamon
Cooking
  • 25g butter

Method

  • Oven at 246 degrees C preheat cast iron pan in oven
  • Mix the batter, half milk first to ensure even mixture
  • heat butter in cast iron pan
  • pour in batter
  • Oven ~12-13 minutes or until brown and puffed.
  • It will poof up then decompress. So to impress, bring to table immediately.
