Serves 4 - 6

Ingredients

  • 3.5 pounds Potatoes, cut into 34 inch dice
  • 12 tsp baking soda
  • 3 tbsp butter, cut into 12 pieces
  • pinch cayenne pepper
  • 3 minced fresh chives

Method

  1. 260 degC oven, put baking sheet in oven to preheat
  2. 10 cups water to boil
  3. Add potatoes and baking soda, return to boil, cook 1min
  4. Drain potatoes and return to pot over low heat, shaking occasionally until surface moisture evaporated (2min)
  5. Remove from heat, add butter, 1.5 tsp salt, pinch cayenne, mix with rubber spatula (30sec)
  6. Remove baking sheet and drizzle with 2 tbsp oil, transfer potatoes to sheet and spread. Roast 15 min
  7. Scrape turn potatoes 15min
  8. turn again, roast until starting to brown 5-10 min
  9. Stir in chives, season, serve
