Serves 4 - 6
Ingredients
- 3.5 pounds Potatoes, cut into 3⁄4 inch dice
- 1⁄2 tsp baking soda
- 3 tbsp butter, cut into 12 pieces
- pinch cayenne pepper
- 3 minced fresh chives
Method
- 260 degC oven, put baking sheet in oven to preheat
- 10 cups water to boil
- Add potatoes and baking soda, return to boil, cook 1min
- Drain potatoes and return to pot over low heat, shaking occasionally until surface moisture evaporated (2min)
- Remove from heat, add butter, 1.5 tsp salt, pinch cayenne, mix with rubber spatula (30sec)
- Remove baking sheet and drizzle with 2 tbsp oil, transfer potatoes to sheet and spread. Roast 15 min
- Scrape turn potatoes 15min
- turn again, roast until starting to brown 5-10 min
- Stir in chives, season, serve
