Shrimp toast
Ingredients
Shrimp paste
- Shrimp / Prawn 500g
- Egg white 1 large
- minced garlic clove
- grated ginger 2 tsp
- (alternative flavoring, use a little bit of konbu extract)
- sugar 1 tsp
- salt 1⁄2 tsp
- white pepper
Other
- White stale bread (less moisture) or garlic bread
- Sesame seeds
- or panko
Method
- Chop half of the prawns fine, half rough
Whip the prawns with rest of ingredients
Cut crust off the bread
Spread paste onto bread
Cover with sesame seeds/panko, you can press them in
Store overnight in the fridge
Fry
- Setup dripping rack
- Peanut oil 160-176 degrees C
- Fry shrimp side down. 3 min golden brown. Then turn 1 min
Cool 5 min, cut diagonally
