Shrimp toast

Ingredients

Shrimp paste
  • Shrimp / Prawn 500g
  • Egg white 1 large
  • minced garlic clove
  • grated ginger 2 tsp
  • (alternative flavoring, use a little bit of konbu extract)
  • sugar 1 tsp
  • salt 12 tsp
  • white pepper
Other
  • White stale bread (less moisture) or garlic bread
  • Sesame seeds
    • or panko

Method

  • Chop half of the prawns fine, half rough
  • Whip the prawns with rest of ingredients

  • Cut crust off the bread

  • Spread paste onto bread

  • Cover with sesame seeds/panko, you can press them in

  • Store overnight in the fridge

Fry
  • Setup dripping rack
  • Peanut oil 160-176 degrees C
  • Fry shrimp side down. 3 min golden brown. Then turn 1 min
  • Cool 5 min, cut diagonally
