Tomato egg

Ingredients

Aromatics
  • 4 Scallions, separate white and green
  • 3 tbsp oil
  • 3 garlic cloves, sliced thin
  • 2 teaspoons grated fresh ginger
Others
  • 8 large eggs
  • 2 tbsp shaoxing wine
  • sesame oil
  • 1 tsp salt
  • 800g tomatoes canned
  • 2 tbsp sugar

Method

  1. Cook eggs first, use more oil for fluffier eggs
  2. Aromatics
  3. Tomatoes, salt, sugar, cook down the liquid a bit
  4. Add eggs back in, let it soak in the sauce
  5. Garnish with green parts of scallions
