Tomato egg
Ingredients
Aromatics
- 4 Scallions, separate white and green
- 3 tbsp oil
- 3 garlic cloves, sliced thin
- 2 teaspoons grated fresh ginger
Others
- 8 large eggs
- 2 tbsp shaoxing wine
- sesame oil
- 1 tsp salt
- 800g tomatoes canned
- 2 tbsp sugar
Method
- Cook eggs first, use more oil for fluffier eggs
- Aromatics
- Tomatoes, salt, sugar, cook down the liquid a bit
- Add eggs back in, let it soak in the sauce
- Garnish with green parts of scallions
